Ginger cake
I adapted this recipe
60 g butter
125 g golden syrup
100 g plain flour
25 g self-raising flour
1 tsp bicarbonate of soda
4 tsp ground ginger
25 g crystallized ginger pieces
1 tsp cinnamon
1 tsp nutmeg
100 g light brown sugar
125 milk
1 egg
Grease and line a 20 cm square tin or 2 lb loaf tin. I put a cake liner in a loaf tin.
Preheat oven to 160 c (mines a fan oven and runs hot)
Melt golden syrup and butter on a low heat
Put flours, soda and spices in a mixing bowl.
Add the melted syrup and butter, mix
add the sugar and egg, mix
Add the milk, mix.
The batter is really really runny, so don't worry.
Pour into tin and bake for 45 minutes.
Cool and eat
This make a spicy cake, which I love, but you can leave out the crystallized ginger and play around with the spice amounts.
Its perfect with coffee.
